I started Cupcake Provocateur out of my love of baking and sewing, with a focus on cupcakes, custom cakes, vintage inspired aprons and textiles for the kitchen. Over the past 4 years with allot of hard work have turned a hobby into a business. One person that has been with me almost the entire time is Pinup Model Ludella Hahn. Ludella has been modeling my designs for quite some time and has become one of the main models representing CP. I from time to time interview and feature models, photographers, and people of interest. I hope you enjoy this interview from not to long ago🙂

Whip Cream 101

Whip cream can sound intimidating if you have never made it before, however it is a very simple thing to “whip up”. And can add a simple gourmet touch to any dessert as well as savory dishes! Below is the recipe for a simple no-fail whip cream. I also added sweet and savory variations to try. the flavors you can create are endless, especially for savory dishes, you might not think whip cream would work in a savory dish, but an herb cream over chicken pot pie will add a delightful surprise to an ordinary dish.

Whip Cream 101

Ingredients:

  • 8 oz whipping cream or heavy cream
  • 3 tablespoons  powdered sugar
  • 1 teaspoon vanilla

Directions:

  • whip the cream using mixer set to med/med high, whip until cream starts to thicken about 15-30 seconds, gently add sugar and vanilla, beat untill soft peaks form about one minute. be careful not to over whip the cream, it can turn into an almost whipped butter consistency if over whipped.

Variations:

  • Chocolate Cream – add one teaspoon of coco powder (add a dash of hot sauce for a gourmet touch)
  • Almond Cream – add one teaspoon almond extract or liquor
  • Cream Cheese – cream 8 oz of cream cheese, fold whip cream to combine
  • Peanut Butter – add one tablespoon peanut butter
  • Marshmallow Cream – add 1/4 cup marshmallow cream
  • Raspberry Cream – add one tablespoon seedless raspberry jam
  • Orange Cream – add one teaspoon orange extract or liquor
  • French Vanilla – cut 2 vanilla beans in half, scrape seeds out and add to cream
  • Cinnamon – add 1/2 teaspoon ground cinnamon

Savory Ideas: serve over thick soups stews or casseroles (I always add one teaspoon of confectioners sugar for a sweet savory balance)

  • Lemon Pepper Cream – add one teaspoon lemon zest and pepper to taste
  • Chipolte Cream – add a few dashes of chiplote hot sauce
  • Ginger Lime Cream – 1/2 teaspoon grated ginger and one teaspoon fresh squeezed lime juice
  • Herb Cream – add 1/4 cup freshly chopped herbs (parsley, thyme and basil work the best)

Orzo & Turkey Stuffed Tomatoes

Below is a recipe I created a few years ago, as I build my new arsenal of recipes I figure I would revisit some of my old favorites. I was very proud of this recipe. It was the first time that I was able to have a real garden to plant veggies in and as a still newlywed at the time I was particularly proud that I grew my own Tomatos and made dinner for my Hubby…..very domestic of me🙂

*This is more of a Spring/Summer dish, but can be easily adapted for colder Months by using Peppers and baking topped with tomato sauce and shredded Mozzarella.

Orzo & Turkey Stuffed Tomatos

Ingredients:

  • 1 16 oz box of orzo
  • 1-2 lbs. sweet or spicy turkey sausage removed from casing
  • 10-12 beefsteak tomatoes
  • 1 medium vidalia onion chopped
  • 1 red sweet bell pepper chopped
  • 2 cloves of garic minced
  • 1/2 cup butter melted
  • 3/4 cup cubed mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 cup sweet basil finely chopped
  • 1/4 flat leaf parsley finely chopped

Directions:

Set oven to 350. Thinly cut tops off of tomatoes. Scoop out pulp leaving 1/4- 1/2 in. thick shell reserving 1/4 cup pulp for mixture. Invert tomatoes onto a paper towel lined cookie sheet. Cook orzo according to package directions. Melt butter in a med. sauce pan and saute the onion, garlic and pepper add chopped herbs, salt & pepper set aside. Saute the turkey sausage till cooked through making sure to drain out all liquids. Drain orzo toss with butter and onion mixture, sausage, and cheese. Fill tomatoes drizzle extra virgin olive oil and season with salt & pepper. bake for 8-10 minutes. If serving cold omit baking tomatoes.

Oreo Cream Trifle

While I love making cupcakes, I absolutely love making all kinds of different desserts. I made this Oreo Cream Trifle for Christmas and it was an absolute hit! I usually make a homemade version of the classic Peanut Butter Pie for Christmas dessert, but I felt like something new and came up with the recipe below. I layer this Trifle with chocolate cake, cream cheese whip cream, milk soaked Oreo cookies and chocolate pudding. There are many different versions of this on the web using brownie instead of cake and artificial whipped cream and instant chocolate pudding, which I am sure tastes very good, but once you use fresh ingredients to make this you will realize how indulgent this dessert is! For more of a moist Trifle I layered homemade chocolate cake instead of brownies. Even if you use store bought cake mix and instant pudding I would suggest using fresh homemade whip cream, it makes all the difference adding that homemade touch!

Oreo Cream Trifle

Ingredients:

  • 2 packages of Oreo cookies (reserve 10 for garnish)
  • 1/2 cup milk (to soak cookies)
  • chocolate cake, cut into squares (use your favorite recipe or mix)
  • 2 cups chocolate pudding (homemade or box mix)

Cream Cheese Whip Cream

Ingredients:

  • 1 8oz. cream cheese (room temperature)
  • 16 oz whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla

Directions:

  • bake and cool chocolate cake and cut into squares
  • make chocolate pudding, if making stove top pudding let cool before layering
  • beat cream cheese till smooth, add in confectioners sugar and vanilla till combined (reserve 1 cup for garnish)
  • beat whipping cream till soft peaks form, fold into cream cheese mixture
  • soak Oreo cookies in milk as you layer to avoid them falling apart

Assembling:

layer cake, whip cream, Oreos, and pudding. Top with reserved whip cream and cookies

Happy New Year 2013

Let me start off and wish you a very Happy New Year! As we say goodbye to 2012 and usher in a new year of sweet things to come! The world did not end as predicted by the Mayans and we have yet to fall off the “Fiscal Cliff” but who wants to think about that when we can talk cupcakes! 2012 was an amazing year for me and “amazing” is not a word I always use, however I became a Mommy for the first time to our beautiful Daughter on August 26th of last year and to me that deserves an “amazing”! Angelina Maria is I and my Husband Charlie’s little cupcake, she was born 7 weeks early and is as healthy as a full term baby! I look forward to teaching her how to bake and sew and how I turned a hobby into a business and all that fun stuff! Angelina is my inspiration for starting up my blog again. While I constantly work on expanding Cupcake Provocateur as a bakery and textile business. Angelina reminded me of how important it is to just sit back and enjoy the moment. Blogging is another creative outlet for me, where I can share my silly little musings with you or just myself and my family & friends. I hope you enjoy reading my blog as I create a little scrapbook on my little part of the web.🙂
